Tomato Cucumber Salad
This Tomato Cucumber Salad is excellent served with blackened fish or chicken, it's also excellent served with peas.
- 1-2 real ripe tomatoes
- 1-2 cucumbers
- basil
- oregano
- tarragon
- parsley
- ground pepper
- lemon juice (1/2 squeezed lemon)
- 1 lg. red pepper
- 1 lg. red onion
- 1 bulb garlic
You can't go wrong with the amounts of seasonings you use in this recipe. Stir in enough olive oil to cover everything well.
Tomato Cucumber Salad II
- 1 tomato
- 1/2 peeled cucumber
- 1/4 cup sour cream
- 1 cup mayo
- dill to taste
Dice tomato and cucumber into small bite size pieces.
Combine all ingredients in a salad bowl.
Refrigerate to chill and let flavors mix and mingle for about a hour, then serve.
Stuffed Tomato Salad
Select well shaped tomatoes and scald one minute in boiling water.
Remove skin and scoop out some of the center.
Sprinkle tomato with salt and turn upside down, chill.
Fill centers with chicken, tuna or shrimp salads. Garnish with hard cooked eggs.
