Potato Recipes - The Best Potato Recipes

In the South we consider potatoes to be a comfort food and they are delicious served in one way or another with just about any meal you put together...

1. Cook potatoes in their skins to start such dishes as hash browned potatoes or potato salad. Skins keep nutrients in.

2. New potatoes are best for boiling and for salads.

3. Choose potatoes that are firm and smooth.

4. Store potatoes in a cool dark place.

5. Potatoes sometimes turn dark when cooking, no reason for concern, as this doesn't affect the taste, texture or nutritional value.

Fried Potatoes

The secret to great french fries is to get your oil hot first, place fries into oil, reduce heat to medium until fries soften and then cook on high heat until crispy as desired. Fried Potatoes are a southern favorite, delicious served with a hamburger, all kinds of sandwiches, steak, fried chicken or just a plate of fries and some ketchup.

  • Potatoes
  • Cooking Oil
  • Salt and Pepper, to taste

Pare potatoes and soak in cold water for about an hour.

Cut in slices and dry on a paper towel.

Drain on paper towels and sprinkle with salt and pepper.

Mashed Potatoes

Mashed Potatoes are a southern favorite. These potatoes and a pot of purple hull peas are delicious served with fried chicken, pork chops, ham or roast.

  • 6 medium sized potatoes
  • 3 tbs butter
  • 1/2 tsp. salt
  • 1/8 tsp pepper
  • 1/3 cup hot milk

Boil potatoes, mash until smooth, and add butter, salt, pepper, and milk.

Beat until light and pile lightly into a hot dish.

Two stiffly beaten whites of eggs may be folded into potatoes and the potatoes put into a baking dish and browned in the oven.

Baked Potato

Choose baking potatoes of uniform size, scrub to remove any debris, prick potatoes with fork tines, cook recommended amount of time and check potatoes for doneness by using fork tines or a skewer.

  • 1 med baking potato
  • 1 tsp olive oil
  • 2 tsp butter
  • 1/4 cup shredded
  • cheddar cheese
  • 1/2 tsp salt
  • a pinch of black pepper

Oven should be pre-heated to 300 degrees. Wash, scrub and pierce the skin several times with the tip of a knife.

Rub the skin with olive oil and salt.

Bake in preheated oven for 90 minutes, or until slightly soft and golden brown.

Cut potato down middle, add butter, salt and pepper. Sprinkle cheese over top of potato. You may top potato with anything you desire, such as sour cream, bacon bits, salsa, chicken, steak, chives and green onions. The list is endless...

Parslied Potatoes

Parslied Potatoes are a southern favorite, delicious served with roast beef, fried chicken, pork chops or ham. Just add some english peas and cornbread and this will be a wonderful meal.

  • 1 1/2 lbs. sm. new red potatoes, scrubbed
  • 1 T. vegetable oil
  • 1 med. onion, chopped
  • 1 sm. clove garlic, crushed
  • 1 c. chicken broth
  • 1 c. chopped fresh parsley, divided
  • 1/2 tsp. pepper

Peel a strip of skin from around the middle of each potato; place potatoes in cold water. Set aside.

Heat a large skillet over medium-high heat; add oil. Saute onion and garlic for 5 minutes or until tender. Add broth and 3/4 cup parsley; mix well. Bring to a boil.

Place potatoes in a single layer in skillet. Return to a boil; reduce heat. Simmer, covered, for 10 minutes or until potatoes are tender.

Remove potatoes with a slotted spoon to serving bowl.

Add pepper to skillet. Stir. Pour sauce over potatoes. Sprinkle with remaining parsley.

Rotel Potatoes

This yummy potato recipe is always a hit at family dinner gatherings, church socials and office get togethers

  • 6 to 8 lg. potatoes
  • 1 lb. Velveeta
  • 1 can Ro-Tel
  • 1 can cream of chicken soup
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1 can mushrooms
  • Margarine

Peel and slice potatoes. Boil until almost done.

Add Velveeta, Ro-Tel and soup.

Saute in margarine, onion, bell pepper and mushrooms.

Mix all of the above together except potatoes.

Butter casserole dish. Put in potatoes. Pour mixture over top.

Bake at 325* for about 30 minutes.

Cheesy Potatoes

Makes a delicious dinner when served with herb baked chicken, green beans and hot buttery rolls.

  • 2 cans cream of chicken soup
  • 1 (8-oz.) ctn. sour cream
  • 1 (30- to 32-oz.) pkg. frozen hash browns
  • 1/4 c. grated Parmesan cheese
  • 3/4 c. shredded sharp cheese
  • 3/4 c. shredded Swiss cheese
  • 1/4 c. sliced green onions
  • 1 (2-oz.) jar diced pimentos
  • 1/2 tsp. pepper

Preheat oven to 375*.

Combine soup, sour cream and pepper in large bowl; blend well.

Stir in potatoes, onions, pimentos, cheddar cheese and Swiss cheese.

Spoon into a 9 x 9-inch pan in an even layer; sprinkle with Parmesan cheese.

Bake, uncovered, for 1 hour to 1 hour and 15 minutes or until bubbling and golden brown. Serve immediately or freeze, if desired.

Candied Sweet Potatoes

Sweet potatoes are another favorite southern dish. Great served with ham, turnips greens and hot corn bread.

  • 4 sweet potatoes
  • 1/4 cup butter
  • 1/2 cup dark brown sugar
  • 1/4 cup frozen orange concentrate

Scrub and boil potatoes until tender, about 25-30 minutes, depending on size. Peel, cut into 1-2 inch chunks.

In an ovenproof casserole (or an aluminum foil pan), melt butter and brown sugar together. Add orange concentrate, stirring to mix well.

Put sweet potatoes in the casserole dish and coat well with the butter and sugar mixture.

Cover casserole with aluminum foil to seal.

Bake in a 350 degree oven for 30 minutes, turning to baste potatoes about every 10 minutes or so.

Potato Croquettes

These potatoes are delicious seasoned with parsley, onion, salt and pepper.

  • 1 1/2 cup cold mashed potatoes
  • 1 Tbs butter
  • 1 tsp minced parsley
  • 2 Tbsp cream
  • 1/4 tsp salt
  • corn meal
  • 1/2 tsp minced onion
  • 1 egg
  • dash of pepper

Mix up a paste with the potatoes and butter, add the parsley, salt, and pepper, cream, onions and egg.

Mold into croquettes, dip into the egg white, roll in corn meal.

Fry in deep fat.

Scalloped Potatoes

This recipe is very easy to make and always a hit..

  • 1 can Cheddar cheese soup
  • 1/2 cup milk
  • 1 tsp butter
  • 4 thin sliced potatoes
  • 1 sm. onion sliced thin
  • 1 tsp paprika

Melt butter in casserole.

Add cheese soup, onions, potatoes and paprika.

Bake at 350 degrees for 45 minutes.

Hash Brown Casserole

This Hash Brown Casserole is a great comfort food, take to a sick friend or family member, it's also great as a welcome to the neighborhood gift.

  • 2 lbs. hash browns, thawed
  • 1 can cream of chicken soup
  • 10 oz. grated cheddar cheese
  • 1 pt. sour cream
  • 1/2 cup chopped onion
  • 1/4 cup melted butter
  • 1 tsp salt
  • 1-1 1/2 tsp pepper

Mix all ingredients together.

Topping

2 cups corn flakes crushed, 1/4 cup melted butter.

Bake at 350 degrees for 1 1/2 hours.

Makes 2 casseroles. One for you and one for someone else or they Freeze well.
