Spaghetti with Meat Sauce
- 8 lbs. 10 oz. ground beef
- 3 lbs. chopped onion
- 1 T. + 1 1/2 tsp. garlic powder
- 1 1/2 tsp. black pepper
- 2/3 (No. 10) can canned tomatoes with liquid, diced
- 1/4 (No. 10) can tomato paste
- 1 qt. + 2 c. water
- 3 T. + 2 tsp. basil flakes
- 3 T. + 2 tsp. oregano flakes
- 2 T. + 2 tsp. marjoram flakes
- 1 1/2 tsp. thyme flakes
- 3 gal. water
- 1 T. salt
- 6 lbs. 2 oz. spaghetti, broken into 3rds
Brown ground beef and drain in colander. Press to remove excess fat. After draining beef,
return to pan and continue cooking; add onions and garlic powder.
Cook for 5 minutes; add pepper, tomatoes, tomato paste, 1 quart 2 cups of water and seasonings.
Simmer about 1 hour. Heat 3 gallons water in pot to rolling boil; add salt.
Slowly add broken spaghetti. Stir constantly until water boils again; cook 10-12 minutes or until tender.
Stir occasionally. Drain well. Stir in meat sauce. Pour into serving pan and serve immediately
or cover and place in warmer until ready for service.
Lasagna Casserole
- 2 c. shredded mozzarella cheese
- 1 Ib. ground beef
- 1 c. shredded Colby cheese
- Salt to taste
- Black pepper to taste
- 1 (16-oz.) pkg. wide noodles
- 1 (16-oz.) diced tomatoes
- 1 (26-oz.) ctn. spaghetti sauce mix
- Parmesan cheese to taste
Grease casserole pan and set aside. Heat oven to 350°. Brown ground beef.
Add salt, pepper, diced tomatoes and spaghetti meat sauce mix. Cover and simmer 5 minutes.
Mix cheeses together. Spoon meat sauce into the bottom of pan. Layer noodle on sauce,
overlap if necessary. Pour 1/2 meat sauce on noodle; top with cheese.
Repeat. Sprinkle with Parmesan cheese. Bake for 30 minutes.
Tamale Pie
- 3/4 cupful corn-meal
- 1 1/2 teaspoonfuls salt
- 3 cupfuls boiling water
- 1 onion
- 1 tablespoonful fat
- 1 pound chopped meat
- 2 cupfuls tomatoes
Dash Cayenne pepper, or 1 small chopped sweet pepper, and 1 1/4 teaspoonfuls salt.
Make a mush by stirring the corn-meal and 1 1/2 teaspoons salt into boiling water.
Cook in a double boiler or over water for 45 minutes.
Brown the onion in the fat, add the chopped meat, and stir until the red color disappears.
Add the tomato, pepper, and salt.
Grease a baking-dish, put in a layer of corn-meal mush, add the seasoned meat, and cover with mush.
Bake 30 minutes. boil, reduce heat and allow to simmer 2 to 4 hours.
Cook the noodles in a large amount of boiling water. Allow noodles to become slightly tender,
drain and rinse.
In a 13 X 9 glass baking dish, begin with a thin layer of sauce, then a layer of noodles,
next add enough sauce to cover noodles, next add a layer of cottage cheese topped with a layer of
mozzarella cheese and a small amount of the parmesan.
Continue layering until all ingredients are used.
Bake at 350 for 40 to 45 mins. Let cool 20 to 25 mins. before serving.
Enchilada El Paso
- 1 Ib. ground beef
- 1 tsp. chili powder
- 2 c. tomatoes
- 1 1/4 tsp. salt
- 1 (6 oz.) can tomato paste
- 1/4 tsp. pepper
- 1/2 c. water
- 2 c. Cheddar cheese, shredded
- 1/2 c. chopped onion
- 1 pkg. flour tortillas
Brown meat, drain, stir in tomato paste, water, onions and other seasonings. Simmer 10 minutes.
Place tortillas (torn in pieces) in 8x12 inch baking dish. Cover with sauce and layer of cheese.
Repeat until all ingredients are used. Cover with foil. Bake at 375° for 25 minutes.
May be made ahead and covered overnight in refrigerator. If refrigerated, bake at 375° for 50 minutes.
Enchilada Casserole
- 2 lbs. ground beef
- 3 hot chili peppers, chopped
- 1 med. onion, chopped
- 1 clove garlic, crushed oil
- 1 can tomato sauce
- Salt & pepper
- 12 corn tortillas, fried
- 1 can cream of chicken soup
- 1/2 soup can milk
- 1/2 c. grated cheese
Brown beef, chili peppers, onion and garlic in oil; add sauce, salt and pepper.
Line casserole with 6 tortillas; cover with one-half of meat mixture. Lay remaining
tortillas on top. Pour chicken soup over tortillas; pour milk on top. Sprinkle with cheese.
Bake at 300° for 20 to 25 minutes. Yield: 12 servings.
Cheeseburger Pie
- 1 lb. ground beef
- 1 sm. onion
- 1/4tsp.salt
- 1/4 tsp. pepper
- 1 1/2 c. milk
- 3 eggs
- 4 oz. or more Cheddar or American cheese
- 3/4 c. Bisquick baking mix
Heat oven to 400°. Grease pie plate, 10 x 11/2 inches. Cook ground beef and onions in skillet,
stirring frequently, until beef is brown; drain. Stir in salt and pepper. Spread in pie plate.
Beat eggs, milk and Bisquick in bowl until smooth. Pour over beef mixture. Bake 25 minutes.
Top with cheese and bake 5 to 8 minutes longer or until knife inserted in center comes out clean.
Cool 5 minutes. After you put a slice on your plate, you can add a little chili sauce or ketchup on top!
Serves 6.
Mexican Casserole
- 1 Ib. ground beef
- 2 pkgs. yellow rice
- 1 can Ro-Tel tomatoes
- 1 can whole kernel corn (drained)
- 1 sm. box Velveeta cheese
Brown ground beef and drain. Cook yellow rice and add to ground beef. Add remaining ingredients
and cook until cheese is melted. Is also good for a dip for corn chips.
Mexican Casserole II
- 1 Ib. ground beef
- 1 can Ro-Tel tomatoes
- 1 can cream of chicken soup
- 1 can Ranch-Style Beans (jalapeno)
- 2 c. grated Cheddar cheese
- 1 sm. pkg. tortillas,(corn or starch)
Brown ground beef and drain fat. Preheat oven to 350°. Grease an 11 x 17-inch baking dish
or use non-stick spray. Layer the dish with the tortillas. Add the beef, beans, tomatoes and chicken soup.
Spread cheese over the top. Cover with aluminum foil and bake until hot and bubbly,
about 30-40 minutes.
Beef and Noodle Casserole
- 1 pound ground beef
- 2 cups elbow macaroni
- 4 cups spaghetti sauce
- 12 ounces processed cheese such as Velveeta, sliced
Preheat oven to 375 degrees F.
Brown the ground beef in a large skillet; set aside. Drain and set aside.
In a 9x13 inch baking dish, layer the macaroni, ground beef, tomato sauce and cheese,
repeat layers two times. Bake at 375 degrees F for 30 minutes, or until top layer of cheese is bubbly.
Pizza Bake
- 1 to 2 Ibs. ground beef
- 1 sm. onion, chopped
- 1 sm. bell pepper
- 2 jars pizza sauce
- 1 pkg. shredded Cheddar cheese
- 1 pkg. mozzarella cheese
- 1 (16-oz.) pkg. egg noodles
Cook beef with onion and peppers till brown. Drain well; add pizza sauce; simmer about 10 minutes.
Cook egg noodles. Drain and rinse. Layer ingredients in (8 x 8-inch) casserole: noodles, sauce,
both cheeses; repeat; end with cheese. Bake at 325° for 20 minutes.
Baked Ziti
- 1 lb. ground beef
- 1 pkg. pepperoni, chopped
- 1 can prepared spaghetti sauce
- 1 pkg. rotini noodles
- 8 oz. shredded cheddar cheese
- Salt and Pepper
Crumble and brown the ground beef with salt, pepper Italian seasoning, onions and mushrooms (if used).
While cooking the beef prepare rotini noodles according to package directions. Drain beef and put in
a 9x13-inch pan. Add pepperoni and spaghetti sauce. Drain noodles and add to casserole dish; mix.
Add cheeses; mix. Level the mixture in the pan. Bake at 350 for 35 minutes.
Beef-A-Roni
- 3 gal. water
- 2 2/3 T. salt
- 2 lbs. 10 oz. elbow macaroni
- 8 lbs. 10 oz. raw ground beef(no fat)
- 1/2 c. dehydrated onion or 2 1/2 c.fresh onions, chopped
- 1/4 (No. 10) can tomato paste
- 1/2 (No. 10) can canned crushed tomatoes
- 3 1/2 oz. beef base
- 1 qt. 2 c. water
- 1 1/2 tsp. black pepper
- 1 T. garlic powder
Seasonings:
- 2 T. chili powder
- 1 T. + 1 1/2 tsp. ground cumin
- 11/2 tsp. paprika
- 1/2 tsp. onion powder
- 1 qt. cheddar cheese, shredded (opt.)
Heat water to rolling. Add salt. Slowly add macaroni. Stir constantly until water boils again.
Cook for approximately 8 minutes or until tender; stir occasionally. Do not overcook. Drain well.
Set aside for Step 4. Brown ground beef and drain in colander. Press, draining beef to remove excess fat.
After draining ground beef, return to pan to continue cooking. Add onions to beef and cook for 5 minutes.
Add tomatoes paste, tomatoes, beef base, water, pepper, garlic powder and seasonings until heated through,
5-10 minutes. Pour into serving pans. Sprinkle shredded cheese (optional) evenly over pans.
Place uncovered in warmer to allow cheese to melt before serving.
Beef Pasta
- 1-lb. can ground beef
- 2 1/2 c. hot water
- 1/2 c. milk
- 1 box Hamburger Helper, beef pasta flavor
Brown ground beef in 10-inch skillet; drain. Stir in hot water, milk, uncooked pasta and sauce mix.
Heat to boiling, stirring occasionally. Reduce heat, cover and simmer until pasta is tender.
Remove from heat and uncover. Will thicken as it stands.
Chili
- 1-2 Ibs. ground beef
- 2 (6-02.) cans Ro-Tel tomatoes
- 3 cans chili with beans
- 2 pkgs. chili seasoning
- 2 cans diced tomatoes
- 2 cans pinto beans
Cook ground beef until done. Drain. Then add pinto beans, then add chili with beans, then tomatoes;
add Ro-Tel tomatoes; add chili seasoning. Simmer 10 minutes. Top with grated cheese then eat.
Hamburger Beans
- 1 lb. ground beef
- Chopped onions
- 1 can Bush homestyle beans
- Pepper & salt
Cook ground meat and drain. Add onions, pepper and salt. Add can Bush homestyle beans.
Bake or heat together.
Classic Meat Loaf
- 1 1/2 lbs. ground beef
- 1/2 c. dry bread crumbs
- 1 egg, slightly beaten
- Vs c. finely chopped onion
- 1 tsp. salt
- 1/2 tsp. pepper
- 1 T. Worcestershire sauce
- 1/2 c. tomato ketchup
In a large bowl, combine ingredients thoroughly; form into a loaf (8x4 inches) in shallow baking pan.
Bake in a 350° oven for 45 minutes. Spread top with tomato ketchup; bake 15 minutes longer.
Let meat loaf stand 5 minutes before slicing. Makes 6 servings.
Meat Loaf
- 1 egg
- 1 can tomato sauce
- 1/2 c. flour
- 1/2 onion
- 1/2 bell pepper
- 2 lbs. ground beef
Mix together egg, tomato sauce, onion, bell pepper and flour into ground beef in a large bowl.
Pour into a baking pan (loaf pan) and let it cook for 1 hour at 350°.
Easy Meat Loaf
- 2 lbs ground beef
- 2 eggs
- 1 14-1/2-oz. can evaporated milk
- 2 env. dried onion soup mix
- 3 slices bread
Dissolve bread in evaporated milk. Mix well with other ingredients.
Form in loaf and bake at 325 degrees until done.
Beef-Rice Casserole
- 1 pound ground beef
- 2 cans cream of onion soup
- 1 package dry onion soup mix
- 1 cup rice, uncooked
Mix all ingredients. Put in baking dish and bake covered.
Four in One Meal
- 1 lb. lean hamburger meat
- 1 can green beans
- 1 can tomato soup
- 1 pkg. instant potatoes
Brown hamburger meat in heavy skillet, drain off excess grease.
Season to taste; salt, celery salt, onion salt or green pepper may be used.
Pour meat in bottom of casserole baking dish. Pour tomato soup over meat, spread evenly.
Next add green beans. Mix package of instant potatoes as directed.
Spread over top of beans as a crust. Dot with butter. Bake 30 minutes at 350 degreees.
Quick Beef-Noodle Skillet
- 1 lb. lean ground beef
- 1 onion, chopped
- 1/2 c. chopped green pepper
- 1 clove garlic, minced
- 2 Tbsp. pure vegetable oil
- 4 oz. med. noodles, uncooked
- 2 8-oz. cans tomato sauce
- 1 tbsp. worcestershire sauce
- 1/2 tsp. salt
- 1 10-oz. can condensed beef bouillon
- 1 3-oz. can broiled mushrooms and liquor
Saute beef, onion, green pepper and garlic in oil in skillet until meat is browned.
Pour off excess fat. Add noodles and combine well. Add remaining ingredients.
Cover and simmer 20 minutes.
Chuck Wagon Casserole
- 1-1/2 lbs. ground chuck
- 1 lg. onion
- 1 pkg. macaroni and cheese dinner
- 1 can whole kernel corn
- Seasoning to taste: oregano, Italian seasoning, salt pepper and garlic
Brown ground chuck and onion in little fat. Prepare macaroni and cheese according to package directions.
Season with salt, pepper, minced garlic, Italian seasoning and oregano to taste.
Mix meat, macaroni and cheese and corn together and bake in 300 degree oven for 15 minutes.
(will freeze well)
Hamburger Casserole
- 1 lb hamburger meat
- 1/2 green pepper, chopped
- 1 can beef consomme
- 1 sm. can mushrooms
- 1/2 onion, chopped
- 3/4 c. uncooked rice
- 1/2 can tomatoes, chopped
- Salt, pepper, and spices to taste
Saute hamburger meat, onions and green pepper. Put in casserole dish.
Add rice, consomme, tomatoes, mushrooms and seasonings.
Bake at 350 degrees for 1 hour.
Noodle Bake
- 1/2 c. celery, chopped
- 1 can cream of mushroom soup
- 1 can tomato soup
- 1 8-oz. can peas
- 1 sm. can mushroom pieces
- 1-1/2 lbs. ground meat
- 1 sm. onion, chopped
- 1 c. noodles, cooked (use broad noodles)
Combine soup,peas, celery and mushrooms. Mix well. Saute meat and onions until brown.
Add to soup mixture, stirring well. Stir in cooked noodles. Put in 2-qt. casserole.
Bake at 350 degrees for 45 minutes.
Hamburger Stroganoff
- 1/2 c. onion, chopped
- 1 tsp. pepper
- 1/4 c. butter
- 1 c. sliced mushrooms
- 1 lb. ground beef
- 1 c. cream of chicken soup
- 2 Tbsp. flour
- 1 c. sour cream
- 1 tsp. salt
Saute onions in butter. Add beef, stirring until light brown.
Add flour, salt, pepper, mushrooms and soups and cook 5 minutes.
Add sour cream. Simmer for 15 minutes.
Hamburger Steak
- 2 1/2 lbs. ground beef
- 1/2 c. each diced bell pepper and onion
- 1/2 tsp. garlic salt
- 2 whole eggs
- 1 T. pepper and seasoning salt
- 1 1/2 T. flour
Mix together. Shape hamburger mixture into steaks and place in ovenproof casserole.
Pour one can mushroom soup over steaks and place in a 350° oven.
Cook about 45 minutes or until done.
Salisbury Steak
- 2 cups ground beef
- 1 small onion, minced and sauteed
- 1/2 cup cream
- 1/2 cup breadcrumbs
- 1 egg
- salt and pepper to taste
Mix ingredients well, mixing a small amount at a time.
Form mixture into oblong steaks and fry until juices are no longer pink.
Serve with your favorite mushroom sauce/gravy.
Simple Salisbury Steak
- 1 can cream of mushroom soup, divided
- 1 lb. ground beef
- 1/3 c. dry bread crumbs
- 1 egg, beaten
- 1/4 c. finely chopped onions
- 1 1/2 c. sliced mushrooms
In bowl, mix thoroughly 1/4 cup of the soup, beef, bread crumbs, egg and onion.
Shape firmly into 6 patties. In skillet over medium-high heat, cook patties, a few at a time
until browned on both sides.
Spoon off fat. Stir in remaining soup and mushrooms;
return patties to skillet. Reduce heat to low. Cover. Simmer 20 minutes or until done,
turning patties occasionally.
Ground Meat and Bean Casserole
- 1/2 pound extra lean ground beef
- 1/2 cup onion, chopped
- 1 (16 ounce) cans baked beans
- 1/4 cup catsup
Brown ground meat in skillet. Add onion and cook until tender.
Add beans and catsup and heat thoroughly.
